'Miyosakae Sakahan' | Shiga Prefecture | Junmai | 15% ABV: Since 1805, and now in it's 14th generation producing sake with traditional methods. Miyosake has a focus on brewing Junmai with Kimoto style. This method relies on natural lactic acid bacteria to create a yeast starter (shubo). Kepping with these traditional methods, pure waters from Mt. Suzuka and locally produced rice are combined to create this Junmai sake. A light tasting sake with a slight nose of nuts and raisins. Pairs well with grilled fish or a caprese salad.

Kitajima Sake Brewery began in 1664 in Harimura Village, where the founding family served as village headman and operated a rice and medicine business. Their brewing history took shape in 1805 under the Yodo Domain, and the modern brewery was formally established as Kitajima in 1950.
Located along the historic Tokaido Road near Lake Biwa, Kitajima carries more than four centuries of craftsmanship forward. Today, the brewery produces roughly 180,000 liters of sake each year, using premium sake rice from the fertile Omi Plains and natural spring water from the Suzuka mountains. These ingredients shape the clarity, character, and consistency of their brew.
