Azumatsuru Junmai Ginjo White is brewed using shiro koji, a white koji more commonly associated with shochu production than sake. This distinctive fermentation method lends the sake a rounded texture and bright, refreshing character.
Light to medium in sweetness, it offers aromas of pear and apple alongside vibrant citrus notes reminiscent of fresh lemon. The palate is smooth and refreshing, with a gentle acidity that brings lift and balance to the fruit-forward profile. Clean and approachable, it finishes with a crisp brightness that invites another sip.

Azumatsuru Shuzo traces its history to 1830 in Saga Prefecture. Although sake production was suspended for many years due to financial difficulties, the brewery was revitalized in 2008 when the founder's descendant resumed brewing, bringing new life to a long-standing family tradition.
Today, the brewery works with locally grown sake rice from Saga Prefecture and draws exceptionally pure groundwater from the region. Combining local ingredients with careful craftsmanship, Azumatsuru has earned recognition for its distinctive sake and has received numerous awards at competitions throughout Japan.
