History:
Founded in 1717 in Uonuma, Niigata, one of Japan’s snowiest regions, Aoki Shuzo has been crafting sake for over 300 years. Their signature label, KAKUREI, reflects the quiet strength of the snow country and the artistry of the Echigo Toji master brewers. While Niigata is known for its crisp, dry Tanrei-Karakuchi style, they pursue Tanrei-Umakuchi, a balance of refined clarity and the rich umami of sake rice. Three centuries of craft, carried forward for the next hundred years.
