Inazo, the childhood nickname of current brewmaster Tomonobu Mitobe, comes from the combined pronunciation of "ine," meaning rice stalk, and "zo," meaning elephant. Brewed with rice hand-grown by Mitobe-san himself, this sake offers a unique glimpse into Mitobe Shuzo's dedication behind every bottle. Citric aromas prelude a full-bodied taste that begins with a mild sweetness, evolving into a bright, flinty, mineral-forward profile and a clean, dry finish.

History:
Established in 1898 in Tendo City, Yamagata Prefecture, Mitobe Shuzo has committed itself to Junmai sake production for the past five generations. A firm adherence to slow, traditional production methods in combination with the mineral-rich water from the Uwa mountains lends the Yamagata Masamune brand its celebrated sharp flavor and expression. Since 2004, the brewers at Mitobe Shuzo have grown and cultivated their own sake rice, a labor-intense rarity in the industry, demonstrating their dedication to the region and quality brewing ingredients.
