Using a clear and deep underground water source, this sake develops a medium-rich complex flavor profile. History:
Founded in 1702 by the Chihara family, Kuncho Sake Brewery sits in Hita City, Oita Prefecture, a region known for its pure spring water and lush natural environment. Working from the historic district of Mameda-machi, the brewery maintains its Edo-period heritage and continues to use time-honored techniques such as Yamahai fermentation. Deeply connected to the local landscape and community, Kuncho crafts sake that reflects the seasons, the gentle character of Hita’s water, and a thoughtful approach to creating drinks that resonate with those who enjoy them.
