Founded in 1865 in the small town of Aizumisato, Fukushima, Oyama Sake Brewery is best known for its flagship sake, Aizu Otokoyama. After nearly two decades of dormancy beginning in 1998, the brewery was revived by Yasushi Kobayashi, nephew of the seventh-generation brewmaster. Drawing on the pure water and natural surroundings of Aizu, along with the region's long brewing tradition, Kobayashi has restored the brewery while carrying its legacy into a new generation.
