Staff At Home: Akiko's Tonjiru Soup Recipe

“Tonjiru (Pork Miso Soup)” for rainy day

 

I like rainy days. Maybe it’s because I’m in California.
I love the rain once in a while. The sound and smell of the rain.
I stand in my kitchen.
Ok, what am I going to cook? What do I want to eat?
It’s a bit cold today, so I guess I’d like to have something warm.

Tonjiru! With a lot of ginger. Ginger and root vegetables warm you up.

Pork has good amount of vitamin B, which helps to limit accumulation of neutral fat, produces beautiful skin, also helps you recover from exhaustion.
Mushrooms boost your immune system.

I will make rice in my Donabe, and have it with Tonjiru!

Warm meal for a rainy day.

 

Ingredients:

*Pork back ribs (sliced) 150-200g (5-7oz)
*Burdock 2 sticks
*Carrots 2
*Daikon 100g
*Taro 4-6
*Shiitake mushroom 6-8
*Shimeji mushroom 1 package
*Konjac (Yam cake) 1 package
*Grilled Tofu 1
*Sea Kelp (Kombu) 5cm (2 inch)
*Ginger 1-3 pieces

 

Seasoning:

*Cooking Sake 3 tbs
*Soy sauce 3 tbs
*Mirin 2 tbs
*Kibi Sugar 2 tbs
*Salt a little
*Miso 4-6 tbs
*Sesami Oil 1 tea spoon
*Water 34oz
*Green onion 1 stick
*Shichimi Pepper (preference)

 

Preparation:

Wash Daikon and carrots and peel the skin. Scrape Burdock skin with the back of a knife.

Peel the skin of yams, and soak them in water. Cut ginger into fine strips. Cut Green onion into  small pieces.

Cooking Instructions: 

  1. Cut Daikon and Carrots, and yams into quarter slices. Cut Burdock diagonally, and thin.
  2. Scoop Konjac with a spoon to tear in pieces, and soak them in salt water, rub, and rinse with water. (this eliminate the odor)
  3. Slice up pork back ribs into small pieces
  4. Pour sesame oil in a pot, put Daikon, Carrots and Burdock and sauté. Once oil gets around the pot, put yam, Konjac, and sliced pork, stir fry.
  5. Pour water in 4, and add sea kelp, Shiitake mushrooms, shimeji mushrooms, and ginger. Leve it on medium heat.
  6. Bring to the boil, remove the scum. Add cooking sake, Mirin, Kibi sugar, soy sauce and salt. Bring to low heat.
  7. Check if yams are fully cooked by stick skewer. If everything is cooked nicely, add Miso and simmer for 5 min
  8. It’s ready! Add some Green onion and Shichimi.
