This Kimoto Junmai Daiginjo has aromas of honeydew melon, candied apple, honey suckle and ripe wild strawberry with subtle herbal accents. Fresh fruit flavors of juicy ripe melon and apple mingle an exotic array of fresh cut herbs and subtle baking spice such as mint, tarragon, and fennel. The remarkable palate has a textural structure of wet stone minerality, refreshing acidity, and lingering silkiness that tapers into a beautiful sharp and crisp finish - a signature of Mitobe Sake.

History:
Mitobe Brewery was established in 1898. It is located in northwest Japan, in Yamagata prefecture. Mitobe San is 5th generation Toji. His style is a beautiful balance of innovation and tradition. It is very rare to find his sake outside of Japan. He brewed one single tank of this sake for this collaboration!
SOTO x YAMAGATA MASAMUNE’s meaning –
SOTO means Outside.
Yamagata means place of mountains. (Niigata borders it to the southwest)
Masamune means sword. Masamune swords were considered
the most perfect samurai swords ever made.
